The journey begins in the vineyards with sun-dried grape bunches that produce highly concentrated, raisin-like grapes. These are then aged in a solera-like system, resulting in an exceptionally flavourful, sweet-tasting wine deserving of the “sweet spot” moniker.

In the vineyards, sugar levels in the grapes are closely monitored until full maturity is reached. Once mature, the vineyard team work through the block, bending or crimping the vine shoots just above the rachis of each grape bunch. This restricts water uptake and initiates the passerillage process, during which the grape bunches lose moisture naturally and sun-ripen on the vine. The grapes slowly become naturally dried, developing a raisinlike character with intensely concentrated flavours and exceptional sweetness. This process continues under careful observation until the grapes reach optimal flavour balance.

The naturally dried grape bunches were hand-picked early in the morning, when temperatures were still cool. Great care was taken to destalk and sort the fruit. Whole bunch fermentation took place in open-top tanks with manual punch-downs twice a day. This ensured maximum colour extraction from the skins while preserving the natural flavours that developed in the vineyards. Halfway through primary fermentation, the grapes skins were drained and pressed in a basket press. The wine was fortified immediately after this to ensure fermentation came to a halt to ensure all remaining natural sugars were retained, before maturation took place in old French oak barrels for 12 months. The fortified wine was back blended into older non-vintage barrels in the winery, creating a Solera system. This wine spent an additional 12 months in barrel before final blending and bottling took place, allowing for optimal maturation which ensured a smooth and long finish.

Rubied-garnet. Raspberry framboise, spicy cinnamon curls, and leafy-bramble florals point to the naturally-dried shiraz; the distinct aromatics cushioned in a scoop of creamy vanilla. This, mingled with classic Christmas cake aromas, cranberry-zing, and autumnal warmth. Sleek and supine on the palate, like a cat curled in the sun. The tannins, aglow and polished, glide to mouthfilling exuberance refreshed by campari-like acidity; seamlessly balancing the natural fruit-sweetness, and ripple of lingering spice. Sumptuous and rewarding.
