The Cabernet Sauvignon, Shiraz, Merlot, Cabernet Franc, Petit Verdot and Malbec were sourced from selected vineyard parcels on the Helderberg Mountain within the Stellenbosch appellation. The typical soils found on the Helderberg provide a rich middle-palate weight, giving the wine exceptional depth and fruit purity. With an altitude of approximately 250 metres above sea level together with the cooling influence of the Atlantic Ocean just 15 kilometres away, this extends the ripening period by up to 3 weeks resulting in lovely phenolic ripeness.
The grapes were hand-picked in the cool of early morning and kept in cold rooms overnight before vinification. Premoum parcels were fermented in Italian Nico Velo concrete tanks using intermittent pump-overs and punch-downs for balanced extraction. The Shiraz grapes were fermented whole in stainless steel under a submerged cap, keeping the skins below the fermenting liquid to limit oxygen exposure, suppress acetic activity, and allow slow, even extraction. After primary fermentation, some batches underwent extended maceration, followed by maturation in a combination of French oak barrels, Stockinger foudre, and terracotta amphorae, before final blending and bottling took place.

The palate is defined by a harmonious, savoury acidity that frames a medium body, supported by soft, round, fruit-coated tannins. Subtle notes of white cardamom and pepper lace the tail, adding length and intrigue. Concentrated yet supple, with an understated intensity that builds confidently in the glass.

Aged for 14 months in 300-litre French oak barrels (15% new), with a small batch of Cabernet Sauvignon (5%) matured in terracotta amphora for 10 months and another (5%) spending 12 months in Stockinger foudre.
